Tandoori Capsicum

Ingredients: ( Serves : 4)

4 medium sized Capsicum / green bell pepper
1/2 cup shredded cabbage
1 tsp cashew nuts, broken
1 tsp coriander leaves (chopped)
1/3 rd cup grated carrots
11/4th cup grated paneer
1/2 tsp cumin seeds (jeera)
1/4th cup french beans (thinly sliced
A pinch garam masala
1/2 tsp garlic paste
1/2 tsp ginger paste
4 tsp green peas
1 tbsp oil
1 tsp raisins
1 tsp red chili powder
Salt to taste
1/2tsp salt
1/2 cup ghee
Preperation :

Slice the capsicum at the stem end and scoop out the seeds and save the stem end.
Heat oil. Add cumin and let it splutter. Add ginger and garlic pastes and sauté for a few minutes.
Add all vegetables and stir fry. Season with salt and red chili powder.
Fry till oil separates. Take off from the heat.
Add grated paneer and garam masala.
Cool the mixture. Add cashew nuts, raisins and coriander.
Stuff the capsicums with the mixture. Cover with stem end and secure with toothpicks.
Skewer the capsicums and grill for 5 minutes or bake in a tandoor for 8 minutes.
To serve, remove the toothpicks, put on a platter and garnish with lemon wedges and tomato slices. Serve hot.
