INGREDIENTS:
Raisin 100 gm. Mixed peels 100 gm. Dried pineapple 100 gm. Dried mango 100 gm. Plum 40 gm. Apple 40 gm. Carrot 40 gm. Brown sugar 80 gm. White butter 100 gm. Eggs 2 nos. Milk 40 ml. Orange juice 15 ml. Lemon juice 5-10 ml. Almond powder 40 gm. Bread crumbs 100 gm. Plain flour 80 gm. Mixed spice A pinch Icing sugar For dressing Liquor or fruit beer For marination METHOD: - Take raisins, mixed peel, dried pineapple & dried mango in a mixing bowl. You may add tutti fruity, cherries, dates and prunes etc to it. - Add diced plums and apple and grated carrots. Soak these fruits in liquor/fruit beer for at least 7 days in a mixing bowl. - Take white butter and brown sugar or ordinary sugar and beat well. After the sugar has dissolved well in the butter add eggs one by one. Also add milk, orange juice and lemon juice. - Mix almond powder and bread crumbs. - Add plain flour and also the marinated fruits little by little and mix well. Add a pinch of mixed spice that is, cinnamon powder, star anise, clove and ginger powder. Place the cling wrap in the moulds and fill them with the mixture and cover it. - Take a little water in a bake and serve dish and place the moulds in it. Keep the small mould for 1 1/2 - 2 hrs, and the big moulds for 6-8 hrs, in pre-heated oven at 180 degree Celsius. - When ready dust with icing sugar and decorate. - Plum Apple pudding is ready to serve.
