Minty-Melon Juice...

Ingredients Method
1 - medium watermelon
1 tsp - lemon juice
1 can - icecream soda
2 scoops - vanilla icecream
2 tbsp - sugar
1 stalk - mint leaves, finely chopped
pepper to taste
few mint leaves for garnishing
salt to taste

METHOD
Chill soda can, till required.
Clean and deseed watermelon prior to use.
Refrigerate for 2-3 hours or till well chilled.
Save a couple of chunks of watermelon.
Chop these fine, keep refrigerated till required.
Transfer remaining chunks to a mixie.
Add all ingredients, except icecream soda.
Pour into 3 tall glasses, which may be previously chilled.
Pour a third of soda into each glass, just before serving.
Garnish with mint leaves.
Serve while soda is still frothing.
Making time: 15 minutes (except chilling time)
Makes: 3 servings
