Basic White Cake ( Bread Machine)

I have a Zojirushi bread machine that produces 2 pound loves of bread. But this recipe should work with most other machines too. You might have to scale the ingredients based on the loaf size.

Ingredients

Eggs - 3 medium
Oil – 2/3 cup
Bread flour – 1 cup
Bisquick – 1 cup
Sugar – 1 cup
Baking powder – 1 tsp
Baking soda – 1 tsp
Vanilla extract – 2 tsp

Method
Proceed according to bread machine directions for cake.

Notes
I usually don’t let it bake for the full time in the machine. I check for doneness about 45 min before the bake cycle ends by inserting in a clean plastic knife or a wooden skewer. If it comes out clean without any batter or light clumps on it. The cake is done and you can stop the machine. This way you get a more moist loaf. Otherwise it gets a little too dry for my liking.
