Ingredients
For Egg Cubes
8 Eggs
4 tbs Finely chopped onions
1 tbs Grated ginger
1/2tsp Garlic paste
2 Finely chopped green chillies
1/2tsp Garam masala
Salt to taste
For Gravy
1/4cup Mustard oil
2 Cubed potatoes (large)
2 Bay leaves
1tsp Whole cumin seeds
1tsp Sugar
2tbs Onion paste
1/2tbs Ginger paste
1/2tsp Garlic paste
1/2tbs Cumin powder
3/4tsp Turmeric powder
1tsp Chilli powder
1 Finely chopped large tomato
1/2cup Shelled peas
Salt to taste
1/2tsp Garam masala
Directions
Egg Cubes
Beat the eggs till light and fluffy. Add the remaining ingredients. Grease a pan. Pour in the eggs and steam in a pressure cooker or rice cooker till set.. Allow to cool and cut in squares and keep aside.
For Gravy
Heat oil in a pan and fry potato cubes till light brown. Take them out and keep aside. Season bay leaves and cumin seeds in the same oil. Add sugar and let it caramelise. Add onion paste and cook for 3-5 minutes. Add cumin powder, ginger-garlic paste, turmeric, chilli powder and tomatoes.
Sauté well over a medium flame till the oil separates. Add potatoes, peas and salt. Sauté for a while and pour 3cups of water. Cover with a lid and allow to boil. When the potatoes are almost done, add egg cubes. Cook for 5 minutes. Sprinkle garam masala and remove. Serve with rice.
