Rice Upma

Ingredients:
Raw rice 1cup
Toor Dal 4 tablespoons
White udad dal 2 tablespoons
Green chillies 3 or 4
Mustard 2 teaspoons
channa dal 1teaspoon
udad dal 1 teaspoon
hing 1/2 teaspoon
cooking oil 5or6 tablespoons
curry leaves 5or6 leaves
coriander leaves
salt to taste
Procedure: Wash the rice,drain out the water & spread it out on a cloth to dry. Coarse grind the dry rice to form rawa. Soak the toor dal & white udad dal for 20 mins. Grind the soaked dals along with the green chillies and hing to a coarse paste. Take a pan (kadai) with 2 tablespoons of oil & heat. Add the mustard & when they crackle add the channa & udad dal. When the dals are fried to a golden colour add the ground paste along with 3 cups of water. Add the required amount of salt, curry leaves & stir. Allow the mixture to come to a boil. Now add the rice rawa a little at a time & keep on stirring it into the boiling mixture. Allow the rice to cook stirring the mixture now & then. Add the remaining oil & cover the pan. Lower the flame & allow it to simmer for 10 to 15 mins. The rice will become soft & the under portion will turn golden & crisp. Garnish with curry leaves & finely cut coriander . Serve with coconut chutney or sambar.
