• Serves: 4 ( ½ cup each)

Ingredients:
• ½ spaghetti squash, cut lengthwise
• 1/2 cup shredded part-skim mozzarella cheese
• 1 Tablespoon grated Parmesan cheese
• 3 Tablespoons seasoned dry bread crumbs
• 1 teaspoon garlic powder
• 1 Tablespoon chopped parsley
Directions
1. Clean out seeds from squash.
2. Place squash, cut side down, in a pot with 2 inches of water; cover and boil for 20 minutes.
3. Completely scoop out strands of cooked squash into a bowl by running a fork over inside.
4. In another bowl, combine remaining ingredients and mix well.
5. Add this mixture to bowl with the squash and blend.
6. Place in a casserole dish and bake uncovered at 350 degrees until slightly browned and cheese melts, about 20 minutes.
