Ingredients:
Azumaya wrappers (available in all American grocery stores like Lucky, etc.)
1 medium potato
2 tbsp curd (Yogurt)
Green chutney (made from coriander leaves, mint, tomato, onion, ginger, garlic & lemon juice)
Red chili powder
Roasted cumin (jeera) powder
1/2 tsp chunky chaat masala (optional)
Oil for deep frying
For tamarind chutney:
1 tbsp tamarind paste
1 tsp saunf (fennel seeds)
1 tsp salt
3 tsp sugar
2 tbsp water
Method:
Boil (or bake in a microwave oven) the potato. Cut into small cubes.
Mix all the ingredients for tamarind chutney and microwave on high for 1 min.
Put the prepared chutney in the freezer for a few minutes to cool.
Fry 10-12 Azumaya wrapper squares on medium heat.
Break the fried squares (papadi) into smaller pieces, Add potato cubes, curd, green chutney and tamarind chutney.
Sprinkle the dry masalas. Serve as a mouth-watering chaat anytime, any day.
Note: Azumaya wrappers fry very quickly. So the oil should not be too hot or else they will burn.
