Ingredients
•Butter lettuce leaves
•Salt
•1 tablespoon fresh orange juice
•Freshly ground pepper
•1 large orange, peeled and sliced
•1/2 cup red onion, chopped
•1 teaspoon white wine vinegar
•1 tablespoon minced fresh cilantro
•1 cup Jicama, julienned
•1 teaspoon olive oil
Directions
1.Line plates with lettuce.
2.Top with orange slices.
3.Mound with jicama.
4.Sprinkle with chopped red onion.
5.Blend juice, vinegar, salt & pepper in small bowl.
6.Whisk in oil in thin stream.
7.Spoon over salads.
8.Garnish with minced cilantro
