Cooking time: Less than 15 minutes
Ingredients
• 825g can apricot halves in natural juice, drained
• 1 tablespoon orange juice, (no added sugar)
• 2 cups low fat or 'diet' vanilla, passionfruit or apricot yogurt
• 4 passionfruit
• 1 tablespoon chopped macadamias
Directions
1. Place ½ cup apricot halves and orange juice in a blender and puree until smooth.
2. Layer the apricot halves, yogurt, puree and passionfruit into four tall glasses. Repeat layers until all ingredients are used.
3. Top with chopped macadamias. Serve immediately.
