Mock Gulab Jamun
Bread koftas filled with a creamy khoya mixture, deep fried and then soaked in sugar syrup.
Cooking Time : 20 mins.
Preparation Time : 15 mins.
Serves/Makes : Makes 6 jamuns.
Ingredients
For the mock gulab jamuns
6 slices of bread
3 tablespoons grated khoya
2 tablespoons chopped dry fruits (almonds, cashewnuts, pistachios)
1 tablespoon sugar
1/4 teaspoon cardamom (elaichi) powder
a few saffron strands
For the sugar syrup
1 cup sugar
1/2 cup water
Other ingredients
oil or ghee for deep frying
For the sugar syrup
1. Combine the sugar and water in a pan and simmer to a syrup of 1 string consistency.
2. Remove from the heat and keep warm.
For the mock gulab jamuns
1. Remove the crusts from the bread slices.
2. Sprinkle a little water on each slice and flatten each slice sing a rolling pin. Keep aside.
3. In a small bowl, mix together the khoya, dry fruits, sugar, cardamom powder and saffron. Sprinkle a little water (approx. 1 teaspoon) and knead into a dough. Divide into 6 equal portions.
4. Place one khoya portion in the centre of each bread slice and bring the sides of the bread together in the centre so as to seal the filling completely.
5. Seal the ends tightly and lightly roll between your palms to form a ball. Ensure there are no cracks on the surface.
6. Deep fry in hot oil over a medium flame till the jamuns are golden brown.
7. Drain and transfer into the warm sugar syrup.
8. Allow them to soak the syrup for 5 to 7 minutes and drain.
9. Serve warm topped with quick rabdi, if desired.
