Ingredients
• 1 cup masoor dal [split red lentils]
• 3 onions, sliced
• 3 tomatoes, chopped
• 1/2 cup spinach leaves, chopped
• 4 garlic cloves, crushed
• 1/2 cup yoghurt
• 3 tsp curry powder
• 1/2 tsp red chilli powder
• 1 tsp ghee
• salt to taste
Directions
1. Heat ghee in a saucepan and fry the onions on medium heat, stirring constantly till they soften.
2. Add crushed garlic and spices. Fry for a few seconds. Add water, tomatoes and masoor dal. Cover and cook on high for 30 minutes. When the dal is completely cooked and soft, remove from heat and blend with a hand blender.
3. Return to heat and add salt and spinach. Simmer on low heat for 10 minutes.
4. Stir in the yoghurt and mix well.
5. Serve hot garnished with coriander leaves and lemon slices.
