Serves 6
Ingredients
750gms Lamb
250gms Lamb stock
2tsp Cayenne
2tsp Fennel seed
1tsp Ginger powder
1tsp Coriander powder
2tsp Black pepper
2 Powdered cardamoms
2tsp Garam masala
1/2cup Yogurt
2tbs Ghee
1tsp Sugar
1/2cup Cream
1Cup Milk
Directions
1. Chop the meat and grind with the stock, cayenne, fennel, ginger, coriander, pepper, cardamom powder and 1tsp of garam masala, until the meat is a smooth paste. Add a little yogurt and ghee while grinding. Shape meat paste into small balls.
2. Heat the remaining ghee and add sugar, cream, salt, the remaining yogurt and garam masala. Pour in the milk, add the koftas, and simmer until the liquid evaporates and the koftas are very tender.
