Tofu Tacos

Ingredients:
1 package (12.3 ounces) silken tofu
1 package taco seasoning mix
1 can (16 oz) refried beans
1 package (12) taco shells, warmed
For toppings: Montero jack cheese, sliced white onions, chopped fresh coriander, jalapenos

Method:
Place tofu and seasoning mix in food processor. Process until smooth.
Transfer to a medium pan and stir for 2 to 3 minutes.
Fill taco shells with tofu mixture. Top with cheese, onion, coriander, jalapenos.
Serves: 6
