1 kg red pumpkin-diced
1 tsp red chilly powder
1 tsp turmeric powder
1 tsp coriander powder
1/4 tsp garam masala powder
salt to taste
1/2 tsp amchoor powder
1 tsp fenugreek seeds (methi dana)
3 tbsp sugar
2- 3 cups of water
ghee to shallow fry
chopped green chillies
Heat ghee in a pan and crackle fenugreek seeds. Add pumpkin and cook for a minute.
Now add red chillies, coriander, turmeric and salt and mix well.
Add the water, cover the pan & cook over slow fire for about 10 minutes or till the vegetable is dry.
Finally add amchoor powder, garam masala and sugar. Mix well.
Garnish with fresh coriander, ginger juliennes and green chillies and serve.
