Ingredients:-

Serves 4
1/2 kg Ladyfingers (bhindi)
2 tsps Oil
1 tsp Cumin seeds
1 medium sized Onion (thinly sliced)
1 inch piece Ginger (finely chopped)
3-4 Green chillies (finely chopped)
1 tsp Fennel seeds (saunf, lightly crushed)
1/4 tsp Fenugreek seeds (lightly crushed)
Salt to taste
1 tbsp Coriander powder
1 tsp Dry mango powder (amchur)
2 tsps Red chilli powder
Method:-

Cut head and tail of ladyfingers. Cut each into two or three pieces depending on the size. Heat oil in a pan and add cumin seeds. As they begin to change colour add onion, ginger and green chillies. Stir-fry till onion turns pinkish. Add fennel seeds and fenugreek seeds and mix well. Continue to cook for one minute. Add ladyfingers and sprinkle salt. Cook, covered, on medium heat till done. Add coriander powder, amchur and red chilli powder. Toss well. Serve hot.
