INGREDIENTS:
Potatoes (small size) 500 gms
Oil to deep fry
Coriander powder 1 1/2 tsp
Red chilli powder 1/2 tsp
Turmeric powder 1 tsp
Aamchoor(dry mango) powder 1 1/2 tsp
Dry mint powder 1/2 tsp
Chopped coriander 1 tbsp
PROCEDURE:
- Peel & prick the potatoes
- Apply salt and keep aside for 10 minute.
- Heat the oil and deep fry the potatoes on a slow flame until the potatoes become soft not brown take out from the oil.
- Place each potato on a flat surface & press with a palm of the hand to flatten it without breaking.
- Just before serving reheat the oil & deep fry the potatoes until crisp & golden brown
- Remove from the oil and keep on paper towel in a broad flat dish.
- Mix together all the dry spices (the coriander powder, red chilli powder, turmeric powder, mint powder, & mango powder) and toss the potatoes from both sides in this spice mix immediately.
- Arrange on a serving platter, garnish with coriander & serve hot.
