Tamari Potatoes & Leeks
Ingredients (use vegan versions):
1-2 leeks, cut in rings
2-3 potatoes, peeled
tamari sauce
fresh ginger, minched
freshly ground white pepper
1 tablespoon oil
Directions:
1. Cook the potatoes in the microwave for 3-4 minutes. They should be somewhat done, but not completely. (You could also boil them in water)
2. Cut the cooked potatoes into cubes.
3. Heat the oil and add the poatoes. Stir. Let fry for 1-2 minutes.
4. Add the leeks and ginger. Pour tamari sauce and freshly ground pepper over the vegetables. (Use as much ginger and tamari as you see fit.)
5. Continue cooking for 5-10 minutes, stirring often.
Serves: 2
