Banana nut bread

Food and Cooking Terms: Butter, Margarine

Yield: servings
Ingredients:
3/4 cup Margarine, or butter
1 cup Sugar
2 Eggs, separated
1/2 tsp Baking soda
1/2 tsp Salt
3 Over-ripe bananas
1 cup Pecans, chopped
2 cup All-purpose flour

Procedures:
1 Cream margarine and sugar; add egg yolks (only) and salt.
2 Add flour and blend.
3 Combine soda with the mashed bananas.
4 Fold in well-beaten egg whites.
5 Add nuts.
6 Pour into 2 small or 1 large greased loaf pans.
7 Bake at 350 degreees for 30 to 40 minutes or until toothpick inserted in center comes out clean.
