Cucumber Soup with lemongrass and Spinach

Ingredients
Unsalted butter - 2 tbsp
Onion - 1 small (minced)
Fresh Lemongrass - 2 stalks minced
(only tender inside part to be used)
cucumber - 2 medium (peeled, seeded and chopped)
vegetable stock - 2 cups
spinach leaves - 1&1/2 cups (chopped and boiled)
coriander leaves - 1/4 cup
Whipping cream - 3 tbsp
salt, pepper to taste
Method
Melt butter in a large saucepan.
Add onion and lemongrass.
Cook gently until onion is tender, say 15 mins.
Add cucumber and stock. Heat to a boil, reduce heat, cover and simmer until cucumber is tender, say 10 mins.
Strain solids from liquid, reserving both.
Puree solids with boiled spinach and coriander leaves in a blender to a smooth paste.
Add reserved liquid, cream, salt and pepper.
Mix until smooth and serve warm or chilled.
