Tips on Potatoes

Peel and cut potatoes and boil them in water in which a little vinegar is added. It will retain their texture & will be done in no time. It will also avoid bad odor and to give a good color to old potatoes.

Boil potatoes with the skins on. Skins will slide off easily when the potatoes are done and you will retain a lot of the natural food value of the potatoes.

Peeled potatoes will last three or four days in the refrigerator if a few drops of vinegar are added to the water.

To improve the flavour of old potatoes, add a little sugar to the water in which they are boiled.

For fluffy mashed potatoes, add 1/2 tsp. baking powder to the potatoes, milk and butter.

You can cut the baking time of potatoes in half by letting them stand in boiling water for 15 minutes before popping them in the oven.

Re-heat leftover baked potatoes instead of discarding them. Dip the potatoes in warm water, then bake at 250 F until heated through.

To add zip to mashed potatoes, add cooked onion and top with grated cheese or nutmeg.

Save foil margarine wrappers to wrap potatoes for baking. They'll be deliciously crunchy.

Give mashed potatoes a beautiful whipped cream look by adding HOT milk to them before you start mashing.

Potato cutlets - Add salt to the water in which the potato are boiling as potatoes absorb salt better this way.

To prevent boiled potatoes from sticking to the grater, always apply little oil on the grater.

Add little milk while boiling potatoes to soften and to cook faster.

Don't use soda bicarbonate for boiling vegetables as it destroys the vitamins present.

Potatoes rot quickly if stored near onions. To prevent potatoes from budding, place an apple in the bag with the potatoes, it also keeps the potatoes from sprouting.

Overcooked potatoes can become soggy when the milk is added. Sprinkle with dry powdered milk for the fluffiest mashed potatoes ever.

If potato chips lose their freshness, place under the broiler for a few moments. Care must be taken not to brown them.

Potato Chips should be wrapped and stored in the freezer. They stay CRISP and never get soggy.
