Tips for Leftovers

Any leftovers can imaginatively be converted to a disguised next meal. Only keep in mind that the texture and taste should not remain the same, to keep your secret intact. |

Leftover chapaties can be dried in an oven and crumbs can be made to use instead of bread. |

If you have pancakes left over, line each with wax paper so they don't stick, place in plastic bag and freeze. When needed, pop into toaster. |

If you have leftover eggnog, substitute it for milk called for in plain muffin recipes. It's also good in pancakes. |

Save all leftover bread trimmings and crusts. Put them in a plastic bag and freeze. When you have accumulated enough, use for making bread crumbs, croutons or stuffings. |

Slice leftover cake, wrap individual pieces and freeze. Put in school or work lunches and the cake will be thawed by noon. |

Don't throw away stale cake -- you can make a fine dessert with it. Soak pieces of the cake in rum, then mix into a thick vanilla pudding and chill. Cover with whip cream or decorate with silvered almonds or serve with fruit syrup. |

If you have leftover tomato paste from a can, scoop it by tablespoonfuls onto a waxed paper-lined baking sheet. Freeze uncovered until firm. Pack in a plastic freezer bag and freeze up to 6 months. You can add frozen tomato paste to soups, stews, or sauces, or thaw quickly in the microwave. |

Cutlets out of leftover vegetables - For best results use cabbage or cauliflower. Boil, peel and mash potatoes with salt, chopped green chilies, & coriander leaves . Add the spices & mix with the vegetable. Take small portions and roll into round balls. |

Make a delicious rice pudding with leftover eggnog. Dissolve 2 tablespoons cornstarch in a little water and blend with 1 quart eggnog, 2 cups cooked rice. Cook over medium heat, stirring constantly, until thickened and beginning to bubble. Sprinkle with a dash of nutmeg. |

Leftover kheer may be further boiled and used to make goodies like kulfi, rabdi, etc. Use the liquid part, by spooning out the rice/sago/vermicelli/etc. These may be ground to a paste in the mixie before adding back to the liquid. |

Puree leftover vegetables, add a little mashed potatoes or bread crumbs, shape into patties, sprinkle crushed potato chips and bake to make an excellent meal. |

Left over coconut milk can be frozen in ice trays and used whenever required. |
